The infamous ‘Green Fairy’ has made its way to Melbourne, with the opening of a dedicated Absinthe bar in Fitzroy.
Absinthesalon recently opened its doors on Rose Street, and is serving only absinthe, albeit more than 30 varieties of the herbal liqueur.
A cast of performers guide guests through the ritual of absinthe drinking, choosing from French, Swiss and even Australian made absinthe varieties. Guests prepare their aperitif on a private table topped with an ornate vintage fountain, where they dissolve their own sugar cube through a slotted spoon.
